Houba leaf is dried Japanese Magnolia Leaf. Cooking on it is a traditional way of cooking that's typically something you'll find among the feast of dishes they cook for you when you're staying at a ryokan in Japan.
These shiitake, girolles and king oyster mushrooms have a beautiful subtle aroma from the houba leaf, dressed in a yuzu miso sauce which is moreish.
