A5 Wagyu Beef Explained

A5 wagyu beef, imported from Gunma in Japan, is one of the most luxurious and beloved cuts of steak out there and perfect for any occasion!

While you can get many great A5 grade wagyu beef from the UK, nothing beats the beautiful marbling wagyu from Japan. Clearly the environment they live in and what they eat is completely different and so the marbling and flavour will inevitably too.

Wagyu sirloin is cut from the 11th rib down to the lower back, and features impeccably uniform ‘sashi’ marbling. Raised by hand in a respectful and devoted manner, it is then graded by the Japan Meat Grading Association who grade the quality from the cross-section of the sixth and seventh rib. The criteria of quality include brightness, firmness and dryness of the meat, the visual quality of the marbling, and the shape of the whole carcass.

People joke that the reason for the white colour of wagyu marbling is down to the cows getting massages every day, but on a serious note, it’s the impeccable environment that they’re kept in and the Japanese rice straws they’re fed with plenty of pure and natural spring water they’re drinking.

It’s a bonus that it’s an easy cut of marbled meat to cook and doesn’t take very long. It just melts in your mouth and the aroma it gives off as you’re cooking is incredible!
